This is one sure way to get those veggies in... I made this as a taster for a community event and the beetroot hummus was a winner, so I thought I'd share the recipe with you... Ingredients 1 small beetroot 1 can chickpeas 2 tbps tahini 2 cloves garlic 1 lemon couple of glugs of extra virgin olive oil sprinkle of pepper and salt Method 1. Place the beetroot in to the processor and blend until nearly smooth 2. Add the zest and juice of half a lemon, add the remaining ingredients apart from the olive oil 3.
