Wow, Wow and just Wow...if you have a sweet tooth or just craving for something naughty then this is a great healthier alternative... I made these for a event and tried them out on the public...ok so everyone is slightly apprehensive at first when I mention they are made from sweet potato, but what a great response when people tried them...they loved them. This is one sure way to get those veggies in... I made this as a taster for a community event and the beetroot hummus was a winner, so I thought I'd share the recipe with you... Ingredients 1 small beetroot 1 can chickpeas 2 tbps tahini 2 cloves garlic 1 lemon couple of glugs of extra virgin olive oil sprinkle of pepper and salt Method 1. Place the beetroot in to the processor and blend until nearly smooth 2. Add the zest and juice of half a lemon, add the remaining ingredients apart from the olive oil 3.
