I made this as a taster for a community event and the beetroot hummus was a winner, so I thought I'd share the recipe with you...
1 small beetroot
1 can chickpeas
2 tbps tahini
2 cloves garlic
couple of glugs of extra virgin olive oil
sprinkle of pepper and salt
1. Place the beetroot in to the processor and blend until nearly smooth
2. Add the zest and juice of half a lemon, add the remaining ingredients apart from the olive oil
3. Drizzle in the oil while the hummus is mixing
4. Add the pepper and salt to season.
It is so quick to make and such a tasty snack. Enjoy with veggies or pitta.
