Sweet Potato Brownies


Wow, Wow and just Wow...if you have a sweet tooth or just craving for something naughty then this is a great healthier alternative...

I made these for a event and tried them out on the public...ok so everyone is slightly apprehensive at first when I mention they are made from sweet potato, but what a great response when people tried them...they loved them.

Ingredients

2 sweet potatoes

12 medjool dates

80g of ground oats

5 tablespoons of cacao powder

5 tablespoons of maple syrup

100g of ground almonds

2 tbsp of melted coconut oil

handful of chopped nuts optional

Instructions

  • Preheat the oven to 180c. Peel and chop the sweet potatoes in to chunks and steam until soft

  • Stir all the ingredients together in a bowl apart from the sweet potato and dates

  • Wizz the sweet potato and dates in a food processor and mix in with the rest of the ingredients

  • Optional - sprinkle in the chopped nuts and mix well

  • Place in a baking tray and cook for about 45 minutes

  • Optional - drizzle the top with dark chocolate
